INGREDIENTS:

  • 4 TBSP. LEMON JUICE
  • 2 TBSP. APRICOT JAM
  • 1 OZ. MINT
  • 1 CUCUMBER
  • 2 CUPS SUGAR SNAP PEAS
  • 1.5 CUPS PARSNIP
  • 1.5 CUPS CARROTS
  • 3 CUPS BONELESS, SKINLESS CHICKEN THEIGHS
  • 2 TSP. SUMAC
  • 1 OZ. GARLIC, MINCED
  • 1 CUP PLAIN GREEK YOGURT

BUST OUT:

  • 2 MEDIUM BOWLS
  • SALT AND PEPPER
  • OLIVE OR CANOLA OIL
  • LARGE NON-STICK PAN
  • SMALL BOWLS

STEP ONE: PREP

Start by washing and drying all your produce. Then prepare your veggies by peeling the skin off the carrots and parsnip and thinly chopping the cucumber. Take a handful of cucumbers and finely dice them. Juice two lemons until you have about 4 tbsp. and then chop up the mint leaves.

STEP TWO: MAKE CUCUMBER SALAD

Combine the lemon juice, apricot jam and half the mint in a medium-sized bowl. Season with salt and pepper to taste, and then add the cucumbers. Stir evenly and set in the fridge until later.

STEP 3: COOK VEGGIES

Heat your pan on medium-high heat with a little oil. Add the sugar snap peas and cook for about 2-3 minutes. Add the carrots and parsnip, and continue to cook for another 3-4 minutes, until all are tender and crisp. Once done, transfer to a bowl and keep warm.

STEP FOUR: COOK CHICKEN

Add some more oil to your pain and continue at medium-high heat. Add the chicken thighs, sumac, mint and season with salt and pepper to taste. Allow the chicken to cook about 4-6 minutes per side.

STEP FIVE: MAKE CREMA

In a small bowl, combine the yogurt and diced cucumber. Stir evenly and add salt and pepper to taste. This will make a lovely crema dip for your chicken and veggies!

STEP SIX: FINISH AND SERVE

Divide the chicken and vegetables evenly between plates or plastic containers and serve with the crema on the side.
