How to Make the Best Healthy Bacon Penne Pasta

- 5 OZ. DOUBLE SMOKED BACON
- 2 TSP. GARLIC, MINCED
- 9 OZ. PLUM TOMATOES, SLICED
- 1 LONG RED CHILI PEPPER
- 4 OZ. RED ONION, CHOPPED
- 6 OZ. PENNE PASTA
- 1 BOX TOMATO PASSATA
- 4 OZ. BABY SPINACH
- 1 OZ. PARMESAN CHEESE, SHREDDED
- ¼ TSP. SUGAR
- SALT/PEPPER TO TASTE
- 2 TBSP. OLIVE OR CANOLA OIL
- LARGE POT
- LARGE PAN
- MEASURING SPOONS
STEP ONE: PREP
Thoroughly wash and dry all produce. Fill a large pot with water and a dash of salt, and bring to a boil. Mince garlic, slice tomatoes into ½ inch pieces and finely chop the chili. Don’t forget to remove the seeds for less heat! Lastly, cut the bacon into ½ inch pieces.
STEP TWO: COOK BACON
Time to sizzle some bacon! Heat your large pan on medium-high heat and add the bacon slices. Cook the bacon and stir occasionally for about five to six minutes, or until they’re nice and crispy. Once cooked, transfer them to a paper towel-lined plate and drain most of the oil from the pan, saving some for the next step.
STEP 3: SIMMER SAUCE
Add garlic, onion, and chili to the pan and cook for about four to five minutes, stirring occasionally. Once the onion has softened, add the tomatoes and passata. Bring to a low simmer and cook for about nine to ten minutes, or until the sauce has thickened.
STEP FOUR: COOK PASTA
By now the water should be at a boil. Add the penne pasta to the water and cook for about nine to ten minutes, or until noodles are tender. Drain and set aside once the penne noodles are finished cooking.
STEP FIVE: FINISH SAUCE
Add the penne and spinach to the sauce and stir until the spinach has wilted. Season with salt, pepper, and sugar to taste.
STEP SIX: FINISH AND SERVE
Divide the penne arrabbiata between places, sprinkle with parmesan, and serve!
