Simple Spanish Paella Recipe

This classic Valencian dish offers so many delicious flavors for you to enjoy! It all starts off with savory, smoky chorizo sausage, perfect for any rice dish! Not to mention, who would have thought to put olives in a rice dish? We sure didn’t. But after we tried it, wow there’s no going back! Not only is this paella recipe super easy, but it provides enough to make dinner for the entire family this weekend!

INGREDIENTS:

  • 18 OZ. CHORIZO SAUSAGE, RAW
  • 2 CUPS RED BELL PEPPERS
  • 1 CUPS GREEN PEAS
  • 2 TSP. PARSLEY
  • 4 OZ. RED ONION
  • 1-2 CUPS JASMINE RICE
  • 4 TBSP TOMATO PASTE
  • 4 TSP PAPRIKA-GARLIC SPICE BLEND
  • 2 TBSP CHICKEN BROTH CONCENTRATE
  • 9 GREEN OLIVES

BUST OUT:

  • 1 MEDIUM POT
  • MEASURING CUPS
  • SALT
  • PEPPER
  • OLIVE OR CANOLA OIL

STEP ONE: PREP

First thing’s first, wash and dry all your produce. Next, core and cut the pepper into thin strips, slice the chorizo sausage into ½ -inch rounds, and dice the red onion. For this recipe, you may find it quicker to cook the rice separately. If so, add equal parts of rice and water, and then cook using a separate pot or rice cooker.

STEP TWO: COOK SAUSAGE

Take a medium sized pot and heat it over medium to high heat. Drizzle some oil into the pot, and then add the sausage. Cook them for about two to three minutes per side, or until they’re all a golden-brown color. At this point the sausages won’t be cooked all the way through, so no worries!

STEP 3: COOK VEGGIES

Add the chopped onion and peppers into the pot and stir occasionally. Cook the veggies until the onion softens, which should be about three to four minutes. Season with salt and pepper to taste if you would like!

STEP FOUR: MAKE SAUCE

Add the tomato paste, spice blend, broth concentrate, and cooked rice to the pot and stir. Cover and cook for about eight to ten minutes.

STEP FIVE: PREP GARNISH AND SERVE

While the paella is cooking, chop the parsley and thinly slice the olives. Then, mix the peas and olives into the paella and stir for about two minutes. Season with salt and pepper, sprinkle with parsley, and serve!
