- 4 GREEN ONIONS
- 4 TSP. GARLIC, MINCED
- 4 TBSP. GINGER
- 12 OZ. JASMINE RICE, COOKED
- 2 LONG RED CHILI PEPPERS
- 6 TBSP SOY SAUCE
- 4 TSP. SESAME OIL
- 1 TBSP. TOASTED SESAME
BUST OUT:
- 1 MEDIUM POT
- MEASURING CUPS
- MEASURING SPOONS
- LARGE NON-STICK PAN
- SMALL BOWL
- SUGAR
- SALT
- PEPPER
- OLIVE OR CANOLA OIL
STEP ONE: PREP
Start by washing and drying all your produce. Then in a medium-sized pot, bring 3 cups of salted water to a boil. Slice the bok choy into quarters and cut up all the green onions into small pieces. Next, mince the garlic, peel the ginger, and then grate 2 tbsp. of ginger. If you’re using the chili, finely chop the peppers and remove the seeds for less heat.
STEP TWO: COOK RICE
Add the jasmine rice to the pot of boiling salted water. Cover and cook for 10 to 12 minutes.
STEP 3: PREP SAUCE
Combine the garlic, ginger, soy sauce, sugar, and chili in a small bowl. Then, add half of the green onion and season with salt and pepper to taste.
STEP FOUR: COOK BEEF
Heat a medium non-stick pan over high heat. Drizzle the sesame oil and add the beef strips. Cook the beef for about one to two minutes per side, or until all the strips are evenly cooked and browned. Once done, transfer to a plate.
STEP FIVE: COOK BOK CHOY
Cook the bok choy in 1 tbsp. of water for roughly three to four minutes, stirring occasionally. Once the bok choy is tender, add the beef and sauce back into the pan.
STEP SIX: FINISH AND SERVE
Divide the rice evenly between plates or plastic containers and top with the beef and bok choy. Sprinkle with some sesame seeds, green onion, chili, and serve!
Enjoy!
