INGREDIENTS:

  • 1 SIRLOIN STEAK
  • 1.5 CUPS MINI YUKON POTATOES, SLICED
  • 2 TSP. GARLIC, MINCED
  • 2 TSP. PARSLEY, CHOPPED
  • 6 OZ. GREEN BEANS, TRIMMED
  • 1 ½ TSP. DIJON MUSTARD
  • 2 TBSP. BUTTER

BUST OUT:

  • BAKING SHEET
  • LARGE PAN
  • SMALL BOWL
  • MEASURING SPOONS
  • SALT & PEPPER
  • OLIVE OR CANOLA OIL

STEP ONE: ROAST POTATOES

Start out by washing and drying all your produce. Next, pre-heat your oven to 450°F and take your butter out of the fridge. Slice all your potatoes into ¼ inch rounds and place them on a baking sheet. Drizzle with oil and season with salt and pepper to taste. Once the oven is finished pre-heating, roast the potatoes for 25-28 minutes, flipping them halfway. Once they’re golden brown, take them out and allow them to cool.

STEP TWO: PREP

While your potatoes are cooking, you can get started on the rest! Mince the garlic and finely chop the parsley.

STEP 3: COOK STEAK

Heat your pan over medium-high heat with a drizzle of oil. Pat the steak dry with some paper towel, and then season with salt and pepper. Pan-fry the steak for about four to seven minutes per side, or until it’s golden brown and cooked to your liking.

STEP FOUR: MAKE BUTTER

Stir together the butter, mustard, 1 tsp parsley, and garlic in a small bowl. Season with salt and better to taste.

STEP FIVE: COOK BEANS

Add some more oil to your pan and warm on medium-high heat. Add the green beans, garlic, and parsley. Cook for about 4-5 minutes, stirring occasionally, until the beans are tender and crisp.

STEP SIX: FINISH AND SERVE

Slice the steak into thin pieces and divide between two plates, along with the potatoes and green beans. Top the steak with the compound butter and serve!
